SAUTÉED JAPANESE YAM AND VEGETABLES WITH COCONUT SAUCE




Ingredients: 1 Yam 1⁄4 Cup scallions or yellow onion (optional) 3 Chard leaves or baby bok choy 1 Red or yellow bell pepper 2 Cups coconut milk 1 Tablespoon thyme 1 Tablespoon Basil 1 Tablespoon rosemary 2 Tablespoon Thai curry paste (red) Directions:

  1. Peel and cube the yam and then boil in water until soft.

  2. Dice onions, scallions, and yellow peppers.

  3. Caramelized onions and peppers in a pan with coconut oil over medium heat.

  4. Roughly chop rosemary, basil, and thyme, add to the pan.

  5. Addthesoftyamtothepan,mixincoconutmilkandThaicurrypasteandsimmeruntilallare

thoroughly heated.
